End of the Rainbow!

When it comes to holidays and kids (maybe adults too!), something sweet is ALWAYS a welcome treat!  And since St. Patrick’s Day is tomorrow I’d like to share with you a couple ideas on how to decorate a cupcake that’s perfect for those lucky Leprechauns!  When kids are popping in after school it’s always nice to have some easy treats on hand…and holidays are just the perfect occasion to create something a little special!  So my beverage cart became a St. Paddy’s Day dessert station piled high with mini cakes–the sweet treat at the end of the rainbow!  Let me show you how easy it is to whip up these whimsical cakes for your holiday celebrations!

Irish fun in the kitchen…

i really love baking…and it’s especially fun during holidays!  whether cookies, pies, or cakes, serving treats for celebrations is almost as much fun as the celebration itself!  and since it’s the eve of St. Patrick’s Day, my treats have gotta be green…

i decided to bake my cakes in different sized liners…just for fun really, but to also create the opportunity to decorate them all differently!  and if you don’t have a favorite recipe go ahead and use a box mix or even grab some simply decorated cupcakes from your local baker…you can always change the decorations on the top!  i think the rainbow is such a happy and colorful St. Patrick’s Day image, so my topping of choice–these multicolored gummy candies!

for the larger cakes, i  just smeared some icing over the cake and topped it with a rainbow slice.  then i piled on gobs of tiny marshmallows to look like a fluffy cloud!

some of the smaller cakes i still topped with a rainbow candy but sprinkled edible, shiny stars to stand in for the pot ‘o gold!  it’s really easy to pipe icing right from a baggie with a corner snipped off…just squeeze it through the hole for an easy and practically professional frost job!  you can find the adorable stars at Wilton so check out the link!  i bought mine for Christmas but they’ll be perfect for a bunch of holidays and celebrations!

the balloons from an earlier celebration are still hanging around…so i just piled them on the bottom of the cart!

you can make two-tiered servers by stacking cake plates or layering regular plates over vases, bowls, or wide drinking glasses.

i used a weathered serving plate right on top of a smaller footed dish for the base of my tier.  no one will notice that they don’t match…they’ll just be lookin at the goodies on top!
