S’more Fun with Watermelons!

Is there a particular fruit or sweet dessert that just reminds you of summer?  For me it has to be the watermelon!  When I see them I can’t help but think of backyard BBQs where they’re assuredly served up…and they can also be a source of family entertainment if you get a good seed-spiting contest going!  This roly-poly fruit just seems to make people smile so it stands to reason that it’s a popular theme for parties!  I served up some watermelon fun for an afternoon treat…but in ways that might not be exactly what you’d think!  Let me share them with you and celebrate the watermelon…

serve up a watermelon slice of happiness!

i love everyday celebrations…maybe even a little bit more than the larger varieties!  and it’s also fun when a simple thing can inspire you to serve up some festivity for no reason at all!  this darling greeting card was what got the ball rolling…

then i stumbled upon this cute paper garland…an easy (and glittery) addition to the table!

a roll of wrapping paper can also be your best friend when planning a party!  you can cover tabletops with it or make an inexpensive backdrop by simply inserting it into a frame!  i just covered the print that was already in it and secured it back into the frame with thumb tacks!

an effortless way to make your goodies look wonderful is to pile them on some pretty trays…i LOVE this set from Amalfi Decor!  they’re so perfect for highlighting not only the sweets but some of my party supplies!  even the paper cups look grand displayed on these gorgeous & beautifully detailed servers!

s’more fun…

well, what’s more fun than a s’more at a summer party…watermelon style!  paper baking cups hold the makings for a single treat, perfect for grabbing and heading to the fire pit to roast up some gooey goodness!  i found these fabulous marshmallows at a specialty shop…but i’ll have a link for something similar in the guide!

another fun twist…

watermelon krispie treats…so easy and fun to make!  they look like watermelon but still taste every bit like the original, childhood favorite!  and perched up on that pretty tray they could even be served at a summertime shower or special event!

watermelon krispie treats

i made two recipes in separate pans so that i could create the contrasting colors with generous additions of food color!  in a greased spring-form pan i used the green batch to create a “rind” around the edge. (it won’t take the entire batch so there’s plenty for nibbling on!)  then i used the pink to fill in the center pressing it firmly into the pan…

the spring-form pan makes it really easy to release the “watermelon” but if you grease a cake pan really well it will still slip right out when you turn it over onto some parchment or wax paper.

with the bottom side up, i loosely laid some twine across my melon slice so that i had a rough idea of where i would be cutting it later when it was cool.  this way i could place the “seeds” so that i wouldn’t be slicing through them.  i used these crispy chocolate pearls but mini chocolate chips would be a great alternative!  while the rice krispie treat is still pliable, press them gently but firmly so they will stick…

then slice up your melon and serve!

Instructions
  1. To make the serving bowl: slice a small portion of the bottom of the melon so that it will stand. Then cut off the top and scoop out the pulp with a large spoon. (and ice cream spoon works well) Cover rind with plastic wrap and chill.
  2. In a blender or food processor blend the melon, sugar and berries. Remove and press through a fine sieve. Discard the solids.
  3. Add the seltzer and chill. Pour into the chilled rind and serve directly from the melon.
  4. Can add scoops of ice cream or sorbet as an option.

enjoy!
