I love to bake cookies…and one of my all time favorites would have to be a good old sugar cookie!  There’s not many things more festive or tasty than a cute, cut-out cookie topped with sprinkles! I love them to be a little on the soft side too which in the past made it hard to find a recipe that would hold its shape when cutting them out!  It’s so disappointing when you’ve got an adorable cutter but when the cookie bakes it ends up looking like a puddle!  Well, no more!  several years ago I was searching for a tasty AND easy cookie recipe that would keep it’s form, taste delicious, and require no chilling…yes I said no chilling!  If you’re an impatient baker like myself, the last requirement is the icing on the cookie for sure!  So today I’d like to share with you this wonderfully simple cookie recipe and a peek at some cookie fun I’ve got up my sleeve!

it’s time for spring baking…

i love this recipe…i use it all the time now when i need to make a cut-out shape.  even the most detailed cutters can be used with this dough and the shapes will still be recognizable when they come out of the oven!  i’ve been baking up some butterfly fun for a springtime inspired gathering i’m hosting soon.  the festivities will be shared at the beginning of the new season in a springtime blog hop! a really exciting way to “hop” into spring with all sorts of inspiration for parties, baby & bridal showers, Mother’s Day, Easter and more!  plenty of collaborations from fellow bloggers and makers all sharing ideas to help you make the merriest of the season!  but for now, i’m in the process of making the sweets for my party and i’m happy to share this great recipe with you!  i mentioned that the dough needs no chilling which i love since i sort of hate to wait for things!  and look how great my cookies maintained their shape…

i had so much fun in the kitchen!  i love a product that helps even a novice baker like myself be able to create such cute treats!  and remember not to worry too much about making the cookies perfect!  while beautiful crafted cookies are an impressive sight, the more modest homemade varieties can be an equal treat…and if you baked them with love, your guests will know!

so a pretty platter of these cookies will grace my table…and my guests won’t have to guess what shape they are!

Ingredients
Servings: dozen
Instructions
  1. Pre-heat the oven to 350 degrees. In the bowl of a mixer cream the butter and sugar until smooth, approximately 3 minutes
  2. Beat in the extracts and egg
  3. In a separate bowl combine baking powder with flour and add a little at a time to the wet ingredients. The dough will be very stiff. Do not chill the dough. Divide it into workable batches, roll out on a floured surface to approximately 1/4" thick round. cut with cookie cutters.
  4. Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack. Frost and serve or freeze un-frosted cookies.
