Happy May everyone! Can you believe that it’s the 5th month of the new year already? And speaking of the 5th…Cinco de Mayo is this Friday so I sure hope you have something fun on your calendar! I love to have a fiesta inspired meal on the 5th…and usually several days leading up to the holiday we indulge on a treat or two since one day just doesn’t seem sufficient to gorge ourselves on our favorites! Today I’m sharing a fiesta dessert table which can be a sweet way to celebrate the holiday without serving up an entire meal! And I’m also including some more EASY DIY projects that can help to decorate your serving station…AND are simple enough that the kids can help! So let’s get ready for a sweet fiesta on Friday!
a Cinco De Mayo sweet treat!
if you’re thinking of serving up any kind of snack for the 5th you can make some simple but festive creations to decorate your table! I created some fun decor with really simple items…
i thought the design on these cards was just too cute not to use them for our little fiesta, so i cut around the print and used a mini paper punch to get these cati ready to be strung up as a tiny garland! and do you notice the “tablecloth” underneath? it’s really just wrapping paper stretched across the tabletop and folded around the corners like a present!
for the centerpiece i made rock-cactus containers and mini succulent pots…
what you’ll need:
*containers such as flower pots, cans, or bowls
*rocks–assorted shapes and sizes
*dried black beans
*spray paint
*paint markers or colored pencils
*artificial succulents
*paper flowers
once you paint your rocks…
you can simply draw on your designs with little Xs, dots, or Vs…any shape that will resemble the pattern on a real cactus. remember that perfection is NOT required! in fact, i had to substitute a chalk marker for my paint pen since apparently it helps to have the lid securely on as to not let it dry out! so use what you’ve got…it will all look cute in the end!
i used a green pencil on the lighter stones…and i love the contrast! whimsical DIY projects are just that…whimsical. so whether you have the kiddos creating art or you’re doing it solo, just have fun!
fill your containers with beans and pop in the rocks! you can add a flower with a dot of glue if you want!
the tiny succulent pots are even easier! just fill some little containers with beans…
and tuck in some miniature succulents…and that’s it!
now for the sweets…
i created this treat table for my family so instead of cocktails, i served up some pineapple-coconut smoothies!
i found these darling plastic margarita glasses and straws and fell in love!
and even though i could have made virgin margaritas, i didn’t want to be responsible for turning my boys on to that flavor just yet…so i stuck to smoothies! i rimmed the glasses with a dusting of sugar and garnished them with a pineapple chunk and mint! they actually tasted a little like a pina colada but i didn’t mention that fact either!
and for the eats…i made these mini pineapple bundt cakes from a boxed mix, dusted them with powdered sugar and served them on grilled pineapple slices!
and the accompaniment is a tiny bowl of “churro” ice cream which is really just a scoop of vanilla topped with a generous sprinkle of cinnamon sugar!
such a fun example of how simple crafts and food can still create a festive celebration!

- 4 cups pineapple chunks
- 1/2 cup coconut milk
- 1 cup honey, greek yogurt
- 1/2 cup vanilla ice cream
- 1 1/2 cups ice
- Put all ingredients in a blender and blend until smooth. can also add a dash of lime juice if desired. Pour into sugar-rimmed glasses and garnish with a pineapple chunk and mint, optional
