Simple Soup Supper!

A soup supper is something my family enjoys often during the winter months! Soup is warm & toasty, it’s healthy, and can be served alone as a one-pot meal! And now that the holidays are over, I’m definitely serving much more simple dishes to counteract all the indulging we’ve done! Today I’m sharing one of my favorite chili recipes which is perfect for a winter-white dinner party or just an everyday meal.  AND you can check out the simple way I repurposed some of my Christmas decor to create easy, seasonal decorations too!  So snuggle up and serve a satisfying soup supper on a chilly winter eve…

enjoy a white chili soup supper!

since it’s only january, i wasn’t ready to lose all the winter touches in my home.  wool plaid, pine cones & greens are lovely on a simple table!

a bowl filled with cones and tiny white berries makes a pretty centerpiece…and candlelight is always pretty any time of year!

set a minimal table!

you don’t need to set a grand table for a soup supper…but by layering plates & bowls on top of a linen napkin, you can make the setting look more substantial.

extra stemware helps too!  coffee mugs are nice for after dinner sipping.

condiments for the chili are fun way to let guests customize their meal!  sour cream, salsa, and jalepeno peppers give some zip to the soup!

and crusty bread is always delicious to sop up soup!

try perching it on a glass for a unique alternative to a bread plate!  (you might recognize my thrift shop cordial glasses i used a ton this year!)

make the butter unexpected too by adding your favorite herbs for a custom spread!

something crunchy is delicious on this chili…so each guest gets their own bowl of corn chips to crumble on top!

no need to be fancy when serving…just ladle up the bowls and keep the soup warm on the stove!

and be sure to leave room for all the goodies guests will pile on top!  i promise they’ll go back for seconds…maybe thirds!

white chili

1 48oz can of northern white beans

2 lbs cubed chicken, or rotisserie chicken

1 T olive oil

2 medium onions, chopped

2 t cumin

1 1/2 t oregano

1/4 t ground cloves

1/4 t cayenne pepper

chili powder & black pepper to taste

2   4 oz cans green chilis with jalepenos (can use regular green chilis)

1 C grated monteray jack cheese

6 C chicken broth

Brown chicken & onions in olive oil in a soup pot or Dutch oven.  If using rotisserie chicken, brown onions until translucent then add the meat.

Add beans, spices and broth. Simmer for 30 minutes

Add cheese and stir until melted.  Serve with optional toppings:  salsa, sour cream, sliced jalepenos, cilantro and corn chips.
