Ingredients

Instructions
  1. Beat the cream cheese and butter until creamy. Add the sugar and mix until light and fluffy.
  2. In a separate bowl add the flour and salt and set aside
  3. Add the eggs one at a time, alternating with the flour/salt mixture. mix well with each addition ending with flour. Then add the lemon, vanilla, almond extracts and the apricot nectar-mixing until blended. Fold in the lavender flowers by hand.
  4. Pour batter into two well greased, small pudding molds (similar to a small bundt or angel food pan) or you can use an alternate container such as a ovenproof bowl or clean, new, flour pot. you may need to adjust the bake time if using a container without a hollow center like the molds)
  5. Bake in a pre-heated oven set at 315 degrees for 1 hour and 20-30 minutes or until pick comes out clean.
  6. Cool 15-20 minutes. Loosen edges of pan with a knife and turn out from pan and cool completely. This cake freezes wonderfully. You can ice it and serve immediately or wrap well and freeze for up to 6 months.

Pound cake is a dessert that will be sure to make your cupid’s heart flutter!  It’s easy to bake and most people love the rich, buttery flavor…including my family!  Each year on Valentine’s Day I  serve our favorite little cake all dressed up in holiday style!  It’s such a delicious way to celebrate February 14th AND I truly enjoy this simple tradition that we all look forward to!  Even though Valentine’s Day is right around the corner, you still have plenty of time to bake a goodie (or two) to present to your Valentines!  So today I’m sharing my favorite pound cake recipe (with a fun flavor twist) and a sweet way to serve it!  Who knows, this might become your new holiday tradition too!  Let’s get right to it…

Today I’m sharing a sweet cactus cake topper DIY…because if you haven’t noticed, the cactus trend has exploded in popularity!  I created this fun topper to add to the festivities when we hosted the baseball players for a Cinco De Mayo team dinner!  Since the meal was served up on this colorful holiday, I wanted to add a few extra decorations to the desserts.  Unfortunately, I didn’t have any time to do extra shopping…which can be a common problem when hosting ANY celebration.  My only alternative was to create something myself…so with the most simple supplies I gave it a try.  Let me tell you I was so thrilled to find how easy it was to make something really cute for very little money OR time!  I want to show you how incredibly simple it is because a cactus cake topper can be used for more than just a Cinco De Mayo celebration!  I’ll show you how I used it again for topping my family’s favorite sweet treat…lavender pound cake!  (and I’ll be sharing the recipe too!)  Let’s get crafting…and maybe a little baking too!

We have a fun Valentine tradition…in stead of going crazy on lots of holiday candy, I serve up one of my family’s favorite cakes instead!  It might surprise you to hear that this cake, that’s an anticipated treat in my household of boys, is a Lavender Poundcake!  I know it sounds a little dainty and sweet, and I have served it to my gal pals and at baby & wedding showers…but this mini cake sure packs a punch of buttery goodness and density that will satisfy any guy in a big way!   And because it’s such a rich dessert I usually save it for special occasions…like Valentine’s Day!  So each holiday I try to come up with a new look for our miniature cake…which for me is almost as enjoyable as eating it!  Today I’d like to share with you the recipe for this fun and unique poundcake…plus another recipe for an equally festive dessert that’s more semi-homemade but still perfect for Cupid!  So find your apron and get the kitchen ready for some baking joy and…

Every year, close to Valentine’s Day, I serve up one of my family’s favorite treats…lavender pound cake!  The recipe makes the most wonderfully moist yet dense cake and the lavender gives it a slight flavor that’s hard for most to determine what it actually is!  And a couple things I love best about this cake…it can be baked in any form you desire (bundt pan, loaf pan, even cupcakes) and frozen until you need a sugary treat!  My favorite way to bake it is in a mini bundt pan.   My mom and I have collected several old, English Pudding pans and they work perfectly for making a baby-sized cake!  I love the miniature size…not just because it’s cute but it’s just right to indulge on without having sugar overload!  And since I’m infatuated with all the Xs and Os this Valentines, I figured I’d carry on with that theme…

An effortless dessert board is just what you need for impromtu gatherings!  Using baked goods (homemade or from the grocer) and a little fresh fruit, you can create the perfect sweet treat! I love keeping an assortment of dessert bread or pound cakes in the freezer just in case I need to serve something last-minute.  They pair wonderfully with fruit, spreads, whipping cream or ice cream…all of which you may already have on hand!  All you have to do is slice them up, pile them on a pretty platter and serve!  I’ll share a board I recently made using sweets right from my freezer and pantry!  And I’ll include our favorite dessert bread recipes too!  So grab a tray…
