A Simple Easter Celebration!

A simple Easter is what most of us will be experiencing this year.  And though there won’t big gatherings with family & friends, we can still find ways to make the holiday special!  Today I’m sharing some of the easy ideas and recycled decorations that I’ll be using to make our day extra festive while we’re quarantined at home.  Since we have nowhere to go and an abundance of time, I LOVE the idea of extra gatherings around our table on Easter Sunday.  So this year I’ll be serving two holiday meals!  We’ll start the day with a casual brunch and I’d like to share with you how I’ll be setting the table AND our favorite breakfast casserole!  So get ready to shop your house for decorations you can use to make a simple celebration feel anything but!

whenever i bake goodies, i almost always freeze half.  i can serve some right away and save the rest for each place setting…

so my summertime place mats fit right into the natural decor and remind me of the woven bird nests.

i scattered extra nests down the table and filled them with plastic eggs.  you could use any holiday candy as a substitute!

a mix of everyday china & holiday plates gets an easy twist…plastic silverware!  perfect for casserole eating AND cleanup!

and while linen napkins aren’t as easy for cleanup they make this simple table look special considering we often use paper towels for everyday dining! 🙂

the dollar-spot napkin rings i grabbed years ago are a fun detail!  you could substitute the ring with ribbon or pretty twine.

and my simple centerpiece has been recycled throughout several seasons so far.  an urn topped with an artificial wreath can be  filled with Easter eggs & silk flowers…

Ingredients
Servings: casserole
Instructions
  1. Melt the first 3 Tablespoons butter in large skillet. Add the meat or mushrooms (or combination) and brown, adding the green onions at the end.
  2. Add the 12 beaten eggs to the meat mixture and scramble. Set aside. (mixture will appear moderately moist)
  3. Make the sauce by melting the 2 Tablespoons butter and whisk in the 2 Tablespoons of flour and pepper.
  4. Add 2 Cups milk and whisk over med/low heat until slightly thickened. Add the cheese and stir until melted.
  5. Pour sauce over the scrambled egg mixture and gently fold together. Pour into a greased 9 x 13 casserole dish.
  6. Melt the remaining 4 Tablespoons butter in a large pan and toss in the bread cubes and paprika. Stir until bread is coated with the butter and then top the casserole with the croutons.
  7. Cover and refrigerate several hours or overnight.
  8. Let casserole come to room temperature and then bake at 350 degrees uncovered for 30 minutes.
