Spicy sips and snacks are so fun for summertime weather!  Appetizers served outdoors somehow taste even better in my opinion. Now that spring is officially here, we have a long stretch of lovely seasons to pile some delicious appetizers on platters for casual entertaining…indoors or out!  AND Cinco de Mayo is not that far away either…making these delicious recipes perfect for your next fiesta too!  If you like a little spice in your food and drink, you’ll be in for a mouth-tingling treat!  Today I’d love to share a few wonderful options for spicing up the snack platter and the bar cart.  And I’ll be sharing two easy recipes that will be a flavorful hit!  We sampled them over the holiday weekend and they got an A+!  I’m really excited to partner with Grand Rapids Popcorn to bring you this inspiration…so let’s get spicy and serve up some tasty fun!

i don’t often make fancy cocktails…but these jalapeno mango margaritas are definitely worth the extra effort!

chili limon popcorn seasoning adds flavorful deliciousness to the rim along with a skewer of charred jalapeno and mango!

and if you’re a novice bartender like me…i suggest getting some quality tequila.  it’s definitely worth it!

Instructions
  1. Char the jalapenos over a flame until blackened. Reserve one for garnish and slice the other(s) removing the stem.
  2. Rim two cocktail glasses with a lime and dip in the chili seasoning. Set aside.
  3. In a cocktail shaker filled with ice, add the charred jalapeno and a few chunks of mango. Use a muddle or wooden spoon to press flavor from the jalapeno and mango.
  4. Add in tequila, Cointreau, lime juice, and mango juice and shake until well chilled. Pour into glasses with crushed ice or cubes.
  5. Garnish with a skewer of mango and charred jalapeno sprinkled with seasoning if desired. Can add a lime slice to the edge of the glass.

Instructions
  1. Crisp the phyllo shells in the oven according to the package directions and set aside until ready to serve.
  2. In a sauce pan add the chicken, chipotles, ketchup, brown sugar, soy sauce, vinegar and chili powder and simmer over medium-low heat for about 8-10 minutes or until heated through and sauce is syrupy.
  3. In another bowl, mash the avocado, yogurt and lime juice together. Then add the chopped cilantro and salt to taste. (can use purchased guacamole if desired)
  4. Fill each phyllo shell with a dollop of avocado mixture and top with chicken. Garnish with a cilantro leaf and lime zest if desired.
