Instructions
  1. Slice the baguette lengthwise and grill cut side down on a hot paninni or grill pan until it's toasted with grill marks. Set aside.
  2. In a medium-hot, dry, non stick skillet saute about half the mushrooms until they release the moisture and begin to brown. Add a splash of the wine and continue to saute until the wine evaporates. Remove from pan and begin again with the second batch of mushrooms. Be sure to cook in batches so that the mushrooms won't be over crowded. They won't brown properly if there's too many in the pan. Set aside when finished with each batch.
  3. Mix 1 olive oil with the minced garlic. Brush over each half of the bread. You may not need it all but be sure to get the garlic bits on the bread. If using roasted garlic, omit the minced. Spread the bread with oil and then with the roasted garlic paste.
  4. Top each bread half with mushrooms. Set some aside to add to the top for garnish.
  5. Cover the mushrooms with the shredded cheese. You may not need all the cheese depending on the size/width of your baguette.
  6. Broil or bake in an airfryer (400 degrees) until cheese is bubbly and slightly golden. (approximately 5-7 minutes) Remove from oven, top with reserved mushrooms and bake again just until garnish mushrooms are warmed through and cheese is golden brown.
  7. Sprinkle with fresh thyme and serve warm

  1. Heat oven to 350. Place your cheese in a small casserole, tiny skillet or on a rimmed bake sheet. Bake for approximately 15 minutes until softened.
  2. While the brie bakes add your chopped strawberries to a sauce pan with the balsamic glaze and agave. add more of each if needed. Heat until berries have begun to soften and liquid bubbles. Add in the blueberries and basil. Toss to coat and slightly warm. Turn heat off burner and let set until cheese is soft.
  3. When brie comes out of the oven, let cool about 5 minutes. Pour the fruit mix over the top and serve with a crusty baguette and crackers.

  1. Crisp the phyllo shells in the oven according to the package directions and set aside until ready to serve.
  2. In a sauce pan add the chicken, chipotles, ketchup, brown sugar, soy sauce, vinegar and chili powder and simmer over medium-low heat for about 8-10 minutes or until heated through and sauce is syrupy.
  3. In another bowl, mash the avocado, yogurt and lime juice together. Then add the chopped cilantro and salt to taste. (can use purchased guacamole if desired)
  4. Fill each phyllo shell with a dollop of avocado mixture and top with chicken. Garnish with a cilantro leaf and lime zest if desired.

  1. Lay bacon pieces on a sprayed and foil lined baking sheet. Mix the sriracha sauce and brown sugar together and spread a thin layer on both sides of the bacon. Bake at 375 degrees for 15-20 minutes or until cooked but not too crispy. Can serve warm or cold.
