I’ve had several recipe requests for the garden potato salad from my holiday buffet posted on Monday… so I decided to offer it up today! I love this yummy and pretty-healthy version of the summertime staple and often make it for warm weather gatherings! I really should make it all the time ’cause it keeps well in the fridge for healthy snacking and you can fiddle with the recipe and make as much or as little as you want! Another bonus — most of the veggies are raw making this salad a cinch to whip up! So here it is…

this delicious summer side dish is not only tasty but looks so pretty too! i love recipes that you can tweak to suit your family…i have to admit i do that a lot! so as i write out the recipe i will say that my version is slightly different from the original…but that’s sort of what i love most about it! basically it’s just the dressing that you can stir into whatever blend of veggies you love most…so use the recipe as a guide and make it just right for you!

garden potato salad (serves 10-12 sides)

6 medium potatoes (2lb)

3/4 C. green beans, cut into bite size pieces

1 1/2 C. broccoli florets

3/4 C. chopped celery

1/2 C. cauliflower florets

1/2 C. red sweet pepper

1/2 C. low-fat mayo

1/2 C. fat-free Italian salad dressing

2 t. dry ranch salad dressing mix

1/8 t. ground black pepper

cut potatoes into 1/2 inch cubes. place in large sauce pan; add water to cover and bring to a boil. reduce heat and simmer until just fork tender (5-7 minutes). drain well and cool.

in a small sauce pan blanch the green beans until just crisp tender (appx. 3 minutes). drain and rinse with cool water.

combine all veggies in large bowl.

in another small bowl combine dressings, mayo, and pepper and stir well. add dressing to the vegetables and toss to coat. cover and chill for 4-24 hours.

it’s that easy! and you can make it ahead which is another bonus. i substitute more cauliflower and broccoli for the celery and i generally make more than the recipe calls for. if i make the recipe substantially larger, i will add another 1/2 recipe of the dressing and then add an additional 1/2 recipe if needed (i’ve never had to make more than double the dressing). it’s really easy to fudge and it still tastes great! and at 115 calories a serving…it makes a great healthy snack too!
